Traditional Caribbean Recipes

Every Mother teaches her daughters how to cook these dishes, and every generation improves upon the previous. As a result, every recipe has 1000 variations.

The recipes we have chosen to show, have been selected because they are easy, delicious and typically Caribbean.

Carrot Juice

4 Pints Carrot Juice
2 Tins Condensed Milk
1 Cup of Water if necessary
1 tbs Nutmeg
1 tbs Vanilla
2 tbs White Rum if desired

Blend all ingredients together. Serve with ice

Very refreshing

Irish Moss

1 Standard Bag of Jamaican Irish Moss
Use half pack Irish Moss (Wash thoroughly)
4 Pints of Water
1.5 tbs of Linseed

Bring to the boil then leave to cool

1 Tins Condensed milk
1 tbs Vanilla
1 tbs Nutmeg
.5 Cup Cherry Syrup

First strain the cooled Liquid (This will be quite sticky). Blend all ingredients for sweetening.

Serve Chilled

Irish Moss is also good for Nursing mothers, lost of appetite and recovery after an operation. Irish Moss is a very good health drink.

And for those who don't know, Irish Moss, or Jamaican Moss is a seaweed" - Graciliaria vellucosa.

Rice and Peas

250g Kidney Beans
Basmati Rice
Spring Onions (Chopped small)
Thyme
Scotch Bonnet Pepper (Chopped small)
All purpose seasoning
Black Pepper
Knob of Butter/Margarine
Salt to taste if required
Coconut Cream

Place beans into cold water overnight
Bring to the boil, boil until beans are soft
Add all other ingredients and bring to the boil until coconut is dissolved
Add Basmati Rice. Reduce heat, cover and cook for about 20 minutes.

Good with Chicken, Beef, Fish etc.

Plantain

Ripe Plantain
Vegetable Oil

Remove the skin, cut into 2 halves. Cut each half into slices

Heat frying pan until hot, add a small amount of Vegetable Oil.

Fry slices until golden brown

Chicken, Rice and Peas, Plantain and Salad with a refreshing glass of Carrot Juice.
